Cooking in Vallarta can be a whole lot of fun if you experiment with the amazing variety of chilies, spices, and odd vegetables. My current favorite chili is the dry chipotle. You can find it at any grocery store. It comes in two forms, dry or canned. The dry variety is great to toss into a soup or casserole because it gives a smokey flavor to any dish. Here are some yummy recipes. |

Lentil soup a la chipotle Sautee a whole onion in oil until nicely caramelized. Add 2-3 garlic cloves, 2 cups of lentils and brown a little. Add 2 carrots, 2 potatoes, zucchini or celery if you have it, sun dried tomatoes, 3-5 dried chipotles, or half a small can of chipotles. Stir around until everything looks o.k. Add a liter of tomato pure and 2 tomato bullion cubes, parsley, and a couple of drops of liquid smoke ( don't you hate it when recipes ask for stuff that is impossible to find?) (I know where you can buy liquid smoke!) Bring to boil, and then simmer for an hour or so. Serve with a nice handful of grated parmesan cheese! Hmmmm buen provecho! |

Chipotle dip Add a can of chipotle to 2 cups of sour cream for the most amazing chip dip! |

Magic cream cheese Experiment with this one. Buy a square of Philadelphia cream cheese and pour a can of salsa on top. Try chipotle, salsa verde, salsa mexicana, taquera etc, and serve with some Breton like crackers. Make sure to put a garnish of fresh cilantro on top of this creation, and you will be amazed at how much your guests will enjoy this, curious as to what type of fine cheese you are serving! |
